Apple Empanada (family night treat)

After a lesson and a fun game of yahtzee we ended with a family night treat.
This time of the year I always order a box of apples from Utah and try to come up with several different ways to eat them. Although they get eaten pretty quickly just by slicing them up and eating them all by themselves. The boys love to slice them up with our apple slicer. So tonight I came up with a fast apple dessert.

Apple Empanadas
apples peeled and sliced
maple syrup
cinnamon
vanilla
uncooked tortillas



Core, peel, and slice apples Saute in pan with cinnamon, maple syrup, 1 tsp. vanilla extract and a few tbls. water. until soft.
Cook uncooked tortillas (from Costco)Spread butter on tortilla and sprinkle with a little cinnamon sugar(optional) Place apples inside tortilla and wrap up burrito style.

They are so yummy that it is hard to eat just one. It is a perfect way to enjoy your fall apples.

Love the reminder of Yatzee! Your reminder of Skip bo kept us going for quite a while!I'm drooling over the treat. LOVE apples in the fall.

Thanks for your sinus help. I took Trish to a different MD. He kept her on the mucinex, flush and probiotic but also added 50,000 mg vitamin D 2x/week (dropped to 1x/week when well) and omega 3 (we use 2 tsp. Carlson fish oil/day to get the 3,000 mg he suggested while she's recovering- then half the dose when well)

She's looking perkier already...

YUM! That looks divine! We will have to try that out over here- our kiddos LOVE apples and LOVE anything with lots of cinnamon and sugar. Those costco tortillas are super yummy too... thanks for the quick and easy dessert idea!

hmmmmmmm...yum. I need to get another apple peeler, we used it all the time years ago. My kids will have fun making these.
